Ackee & Salfish With Coconut Milk Instead of Oil

In a chat today on WhatsApp, some persons were talking about the delicious dish, ackee and salt fish. One persons commented that he likes to eat healthy, therefore ackee and saltfish has to swim in oil which is not healthy for us to eat. I did not concur with that point and another person did not either. Yes Wayne Wright decided to share his style of ackee and salt fish minus plenty coconut oil.  Wayne Wright lives in Lawrenceville, Georgia - the Atlanta metro area. 

He is not a chef but like myself he likes to experiment in the kitchen.  Wayne is originally from Swallowfield, Kingston, and he attended Gaynstead High school.  Wayne worked at JIS and the now defunct JBC FM in 1986 - 88 before migrating to the US. He now works for the Federal Government as a Branch Director in Human Relations.


Now for Wayne ackee and saltfish:

This is how I did it. Soak saltfish and throw of the water several times.  Chop up seasonings (onion, sweet pepper, garlic, tomato, scotch bonnet pepper). Bring pot to hot and add coconut milk. Put in seasonings and saltfish. Have that cook for about 10 minutes. Add Ackee and gently fold them into the saltfish and seasoning. Add black pepper and season to taste. I cook it down until most of the liquid was dried out.

Did you cook the ackee before putting it in the coconut milk?

Yes you must cook the ackee separately then wash and drain it. Do not over cook the ackee.

You know I was listening to one of NNN program,and the question was ask what could we use to instead of saltfish to make our national dish ours, since saltfish is not made here, so I had said rundun and ackee, everyone laugh at me saying that sounds like runbelly, so when I saw this title I smiled, people have to learn to tun them hand mek fashion, and experiment, move away from the one old way of cooking , put me in a kitchen with nothing and I coming out with something lol ,ackee and calaloo is a good one as well not saltfish necessary.

Without the measurements it's hard to gague. Seems like the Acker with all that time on the fire going to be much too soft. I cook it without oil or coconut milk. Sounds more like rundown but/so may actuslly be very tasty.

No you don't need to. Add in time just to steam it down.
